5 pounds baking
potatoes, peeled and cut into ½ inch cubes
2 cups sour cream
1 (8 ounce) package cream cheese
½ cup butter
1 teaspoon garlic salt
1 teaspoon salt
Preheat oven to 375
degrees. Lightly grease a 2 quart baking
dish.
In a large Dutch
oven, combine potatoes and water to cover; bring to a boil over high heat. Reduce heat, and simmer for 10 minutes, or
until tender; drain well.
In a large bowl,
combine potatoes, sour cream, cream cheese, butter, garlic salt, and salt; beat
at medium speed with an electric mixer until smooth. Spoon potato mixture into prepared baking
dish; bake for 45 minutes or until bubbly.
